SOME EASTER BREAK BAKING - POLISH MAZUREK



It's Easter break, so how about baking something good?

Here, let me introduce to you a Polish traditional Easter cake - Mazurek. There are a lot of versions of it, mine is with rose marmalade and italian mascarpone cheese. 

You will need:

PASTRY:

  • 160 g wheat flour
  • 90 g potato flour
  • 70 g sugar
  • 150 g butter
  • 1 egg

TOPPING:

  • 200 g rose petals marmalade
  • 250 g mascarpone cheese
  • 100 g almond flakes
  • rose petals (we didn't use them this time :( )


Sift the flours into a large bowl. Add the sugar, butter and egg.








Mix all ingredients until they are combined and the dough forms a nice round ball.


Using a rolling pin flatten the dough quite thinly.


Cut into 20×40 rectangular and put into the pan.





Bake at 180 C until golden brown.


Add the mascarpone and the jam, and gently mix. 








Then spread onto bottom of pastry shell.





Sprinkle with almonds, you can also garnish it with rose petals (if you use them).
